- 1 cup maize flour
- 1 cup self-raising flour
- ½ tsp salt
- 1 cup plain yogurt (or amasi)
- ¼ cup vegetable oil
🔸 Optional Add-ins:
- Savory: ½ cup grated cheese + chives
- Sweet: ½ cup blueberries or strawberries
✨ Method:
- Preheat oven to 180°C. Line a muffin tray.
- Mix maize flour, self-raising flour & salt in a bowl.
- In another bowl, whisk yogurt & oil. Add to the dry ingredients.
- Fold in your chosen add-ins (if using).
- Spoon batter into muffin cups (¾ full).
- Bake for 20-25 min, or until golden & cooked through.
